it's estimated that as much as 40 per cent of food is wasted in the current take-make-waste system of food production consumption. At the same time, large parts of humanity are on the edge of hunger. These differences are not only prevalent in so called "developing countries"; even in the "first world" countries, the differences in food availability are also immense. 

The food system has evolved into a linear model where we take the nutrients from the ground, produce food items, deliver them to the supermarkets, consume them and at that point forget about the waste that accompanies every step of this process. 

The COVID pandemic, aside from the dreadful consequences on our lives, health and economies has shown us some valuable lessons and one of those i that this linear system is not optimal, it is vulnerable and does not provide security in food availability.
